We visited various local cloud kitchens to understand how they were operated and learn from the people running it. The cloud kitchens were set up in a very homely kitchen space, with no customer-facing area, as all orders were delivered online. The owners gave us a tour of the kitchen, demonstrating to us how they prepared dishes based on customer orders received through various food delivery platforms. They elucidated how they focus on quality, maintain strict standards, and use fresh ingredients.
One of them also shared some valuable insights on the challenges she faced, such as managing deliveries during peak hours, ensuring timely order, and handling fluctuating demand. She mentioned how they often struggled with delivery slot availabilities, as certain times get booked quickly, affecting their order flow.The owner of Hungry Hippie, also highlighted the importance of decision-making in the menu planning. She and her team analyzed customer feedbacks, sales, data, and trends to decide which dishes to retain, remove, or introduce. The business model’s flexibility allowed them to experiment with new offerings and quickly adapt to buyer’s preferences.
Another food entrepreneur spoke about long hours involved, often working over 10 hours a day, especially during weekends or festivities. Despite the challenges, she remains passionate about providing home-like and high quality food which would be delivered to their doorsteps. To conclude our experience, the visit provided us with valuable insights into functioning of a cloud kitchen and the dedication and passion to run a business.
